Beef Tacos-1

 

-1 can Cheddar cheese soup
-1/2 cup salsa
-8 – 8 inch flour tortillas
-2 cups shredded lettuce
-1 pound ground beef

 

 

 

Method: Cook beef in skillet until browned. Pour off fat. Add soup and salsa and heat through. Spoon about 1/3 cup meat mixture down center of each tortilla. Top with Lettuce. Fold tortilla around filling. Serve with additional salsa or rice.

Pineapple Tart Muffins

Pineapple Tart Muffins-1
Crust:

-1/2 c. butter, softened
-1 (3 oz.) cream cheese
-2 Tbsp. sugar
-1 1/2 c. flour

In small bowl combine first 3 ingredients; mix at low speed until well blended. Add flour and mix well. Form dough into twelve balls. Press dough into muffin tins. Sprinkle nuts into each using half the nuts.

Filling:

-2 eggs
-1 c. brown sugar
-2 Tbsp. butter, melted
-1 c. crushed pineapple
-1/2 c. nuts, chopped (pecans are great for this, finely chopped)

Method: Beat eggs and brown sugar until well blended; add butter and pineapple. Spoon filling into muffin tins. Sprinkle remaining nuts on top. Bake 30 minutes at 350°. Cool 15 minutes before removing tarts. Makes 12. *Note, you may sprinkle or top with coconut flakes or more chopped pecans.

Strawberry Bread with Strawberry Cream Cheese

-1 1/2 c. flour
-1/2 c. sugar
-1/2 tsp. baking soda
-1/2 tsp. cinnamon
-1/4 tsp. salt
-1 c. thawed frozen strawberries (reserve 2 Tbsp. juice)
-1/4 c. vegetable oil
-1 large egg white, lightly beaten
-1 oz. chopped pecans
-1/2 c. light cream cheese

 

Method: Preheat oven to 350°. Spray a 9 x 5-inch loaf pan. Combine flour, sugar, baking soda, cinnamon and salt. Make a well in center of flour mixture. Pour strawberries, oil, egg white and pecans into well. Mix well. Spoon batter into prepared pan. Bake 45 to 50 minutes. Cool completely on rack. Combine cream cheese and reserved strawberry juice. Cover and refrigerate.

Crescent Rolls

-2 (8 oz.) pkg. cream cheese, softened (to room temperature)
-2 (8 oz. each) pkg. crescent rolls
-1 egg yolk (save white)
-3/4 c. granulated sugar
-1 tsp. vanilla

Method: Spray 13 x 9-inch pan with vegetable spray. Mix cream cheese, egg yolk, sugar and vanilla together in electric mixer until well blended. Place 1 package crescent rolls on bottom of pan. Spread cream cheese mixture on top. Place the package of crescent rolls on top of cream cheese mixture. Brush top with egg white. Bake in preheated 350° oven for 30 minutes until top is golden brown.

Low Calorie Party Mix

Chex Mix-recipe-1

-(2-4) tsp. margarine
-1 Tbsp. Worcestershire sauce
-1/8 tsp. onion powder
-1/8 tsp. garlic powder
-1 1/2 oz. donut shaped cereal (about 1 c.)
-1 1/2 oz. biscuit shaped cereal (Chex, about 3/4 c.)
-1 oz. broken pretzels

Method: Melt oleo (margarine)
with Worcestershire sauce, onion and garlic powder. Stir until combined. Add cereals and pretzels. Stir together gently until cereals and pretzels are coated. Bake in 250° oven for 20 to 25 minutes or until crispy. Divide into 4 equal servings of 145 calories each.

Diabetic or Weight Watchers exchanges are: 1 bread serving, 1 fat serving, 25 optional calories.

Best Candy Apples with Almonds

-2 c. sugar
-2 Tbsp. butter
-1 tsp. vanilla
-1 c. chopped almonds
-1 c. corn syrup
-1 c. light cream
-8 to 12 apples

Method: Combine sugar, syrup, butter and cream. Stir over low heat until sugar is dissolved. Boil over moderate heat to very firm ball stage (250°), stirring occasionally to prevent scorching. Remove from heat and stir in vanilla. Insert skewer into each apple and dip into syrup. Roll in chopped almonds (roasted). Makes 8 to 12 apples, depending on size.

Yield Servings: Makes 8-12 apples.

Zucchini and Yellow Squash

-2 yellow squash
-2 green squash (zucchini)
-1 Tbsp. olive oil
-1 small onion
-1/2 tsp. pepper
-1/2 tsp. salt
-1 tsp. garlic powder
-1 tsp. parsley
-1 Tbsp. lemon juice
-1 Tbsp. chili powder

 

 

 

Method: Give a good stir and eat. Or you may saute on medium heat for about 10-minutes. Server hot.

Healthy Banana Bread

-1 c. mashed ripe bananas (the browner the better)
-1/2 c. applesauce
-1/4 c. vegetable oil
-1/2 c. granulated sugar
-1/2 c. light brown sugar
-4 egg whites
-1 tsp. baking soda
-3/4 tsp. baking powder
-1 Tbsp. cinnamon
-2 c. flour
-walnuts, raisins (optional; if using, throw in with oil and mix)

Method: Step 1: With an electric mixer or fork or potato masher, mash bananas and add applesauce in bowl.

Step 2: Add the egg whites and both sugars, mix well.

Step 3: In another bowl, blend flour, cinnamon, baking soda and baking powder.

Step 4: Slowly, while stirring add flour mixture to the banana mixture.

Step 5: Add the oil and mix well. Pour into a greased loaf pan. (I use Pam cooking spray.)

Step 6: Bake at 350° for 50 to 55 minutes, sometimes longer, test with toothpick. You may have to cover top with aluminum foil while you wait for the inside to finish baking. Cool for 15 minutes in pan. Enjoy!

Apple Bleu-Cheese Pizza Appetizer

-1 pkg. fresh dough, or your own homemade (enough for one pizza)
-Apples, thinly sliced
-Bleu cheese, crumbled
-olive oil
-black pepper
-thyme or rosemary

 

Method: Stretch dough out to fit your pizza pan. Lightly brush with olive oil. Arrange apple slices over dough. Sprinkle bleu cheese over pizza.



*Note, you may add walnuts with the apples, if you like nuts

Sprinkle black pepper and thyme to taste. Bake in 350 degree oven until done.

Marinated Party Vegetables

-1 small cauliflower, cut into cauliflowerettes
-1 lb. mushrooms
-2 green peppers, cut into strips
-18 black olives, pitted

Dressing:

1 c. olive oil
1 1/2 c. wine vinegar
1 tsp. salt
3/4 tsp. pepper
1 clove garlic, minced
4 Tbsp. sugar

 

Method: Mix all dressing ingredients together; bring to a boil, cool. Pour over vegetables and marinate overnight. Serve on lettuce-lined tray with toothpicks.

Variation: Add other favorite vegetables, such as broccoli, carrot sticks, red or yellow peppers. Mix colors on the tray for a festive look. Red, green and white vegetables are especially pretty at dinner parties.
