Grilled Kebabs for summer-time Grillin’

-1 large green pepper
-12 to 14 spring onions
-5 Tbsp. corn oil
-3/4 tsp. salt
-1 lb. meat
-4 zucchini or yellow squash
-12 to 14 fresh mushrooms
-2 1/2 Tbsp. lemon juice
-3/4 tsp. black pepper
-1 bunch cherry tomatoes

Method: Cut the green pepper in half. Remove and discard the core and seeds. Cut the pepper flesh into 1-inch pieces with a sharp knife.

Slice the zucchini or yellow squash diagonally into pieces approximately 1-inch thick. Rinse the mushrooms under cold water to remove any bits of dirt.Put all the prepared vegetables and the meat into a large bowl; pour in remaining ingredients. Mix well to coat evenly, cover with plastic wrap and allow to stand for about 30 minutes, stirring the vegetables once or twice to ensure they remain evenly coated.

Thread the vegetables and meat alternately onto skewers and arrange them on a grill. Brush the kebabs with the marinade and cook to your liking, turning frequently and basting with the marinade. Serve over rice, if you like.
