-1 Tbsp. crushed black peppercorns
-2 boneless club steaks (6 oz. each)
-2 Tbsp. lemon juice
-dash of hot sauce
-1 Tbsp. chopped fresh parsley
-2 tsp. margarine
-2 garlic cloves, minced
-1/2 Tbsp. Worcestershire sauce
Method: Press 1 1/2 teaspoons crushed pepper into each steak with heel of hand. In small bowl, combine lemon juice, Worcestershire sauce and hot sauce; set aside. In another bowl, combine parsley, margarine and garlic. Form into 2 equal balls and refrigerate until well chilled.
Place steaks on rack in broiler pan and broil about 5 minutes on each side for rare or 7 to 8 minutes for medium. Drizzle lemon juice mixture over steaks while broiling. Serve each steak topped with a garlic “butter” ball.
