What’s for Dinner for a hungry family!

It’s 6pm and baseball practice is not over yet, homework isn’t done and who even remembers what a bath is! Not enough hours in the day? Understood! So, here’s the age old question: What’s for dinner?

My pantry had all kinds of miscellaneous things neatly piled in sections. My freezer had a few frozen tidbits, but what could I make for dinner? Cookbooks.com to the rescue! After having a very successful cookbook fundraiser with Fundcraft Publishing last year for our church mission trip, I learned about Cookbooks.com. Let me tell you – this site is truly amazing. Once you use it, you will always use it.

So, I had almost no time to cook and bedtime was approaching and homework wasn’t even done yet. Don’t you just love those kinds of evenings? I think we have all experienced them. And I refused to pick up fast-food for the third time in a week. Voila! I inspected the pantry, found a few ingredients, spices and a little meat in the freezer – had no idea what to do with them or if they would even make a meal – but I knew Cookbooks could help me with the largest recipe database on the market today!

I went to Cookbooks and entered “ingredients” in the section provided. Then a plethora of recipes appeared, all of which would make a fantastic meal with the miscellaneous ingredients I had on hand. Fantastic! Moreover, I even had choices!

Here’s what worked for me: I had rice, some seasonings, hamburger meat, bacon and a few other little add-ons. I simply entered the ingredients into the ingredient section and an entire list of recipes came up! I was astonished! (and relieved).

This recipe popped up that I chose: “Spanish Rice” Fry bacon and hamburger. Cook rice with 1 teaspoon salt and some butter. Mix together and bake 45-minutes. Wow! It was easy and tasted great! My kids gobbled it up and there was nothing left over. It sure did beat the drive-thru burger at a price that no mother loves. We had a home cooked meal, albeit, not fancy – but great tasting, filling and it was prepared, cooked and served in less than an hour, start to finish.

Thank you Cookbooks! The magic doesn’t stop there. You can get recipes on your cell phone which makes for a much easier grocery shopping trip. You can even enter such entrée names like, pot roast, steak, casserole and more and automatically receive a multitude of varied recipes for that entry. I’ve now learned to cook my family’s favorite – pot roast – about ten different ways! Each recipe is so tasty that we haven’t been able to pick our favorite yet!

Rib Roast…delicious!

favorite Roast

-6 lb. rib roast
-garlic clove
-sage
-rosemary
-thyme
-oil

 

Method: Clean garlic clove; cut in half. Spear roast with pockets, different depths. Place 1 piece garlic in each. Rub roast with oil. Combine seasonings and rub to coat. Place on rotisserie; cook 18 minutes per pound. For medium, 160°; rare, 140° and for well, 170°.

*Remember, the key to making something like a roast or any food extra good… is slow cooking.

Cranberry Crunch Dessert

-1 c. uncooked rolled oats
-1/2 c. flour
-1 c. brown sugar
-1/3 c. butter
-1 (16 oz.) can jellied or whole berry cranberry sauce or try fresh cranberries

 

 

 

 

Method: Mix together oats, flour and brown sugar. Cut in 1/3 cup butter to dry mixture until crumbling. Place half of this mixture in 8 x 8-inch greased cake dish. Cover with jellied or whole berry cranberry sauce. Top with balance of mixture. Bake 45 minutes at 350°. Serve hot, topped with ice cream or whipped cream. *You may serve room temperature on your favorite dessert plates or bowls.

7-UP SLUSH for your Summer Parties

-16 oz. 7-Up or Sprite or Sierra Mist
-1 (6 oz.) can frozen lemonade
-1 (6 oz.) can frozen Orange Juice
-1 large can fruit cocktail or substitute with 12 strawberries
-1 medium size crushed pineapple
-1 large banana
-1/2 c. sugar (if desired)

Method: Mix all ingredients in blender. Put in freezer. Serve frozen. Or you may add 5-6 icecubes and serve right away! Serves 18. Ummmmmmm!

Yum Yum Pineapple Cake

favorite pasta

-white or yellow cake mix,
-prepare as directed
-large pkg. vanilla pudding (instant)
-8 oz. cream cheese
-2 c. milk
-8 oz. whipped topping
-20 oz. can crushed pineapple, drained
-coconut (for garnish)





Method: Prepare cake mix as directed on box. Allow cake to cool. Mix pudding with milk. Spread over cake. Blend whipped topping and cream cheese. Spread over pudding mixture. Spread pineapple over cake. Sprinkle with coconut. Chill.

Homestyle Pepperoni Pizza

-1 loaf white frozen bread dough or Digiorno large pizza dough
-6 Tbsp. Ragu spaghetti sauce
-8 oz. shredded Mozzarella cheese
-1 3/4 oz. sliced pepperoni sausage or 8 oz. bag (use all the pepperoni you want)
-2 Tbsp. chopped onion
-2 oz. mushrooms (canned or fresh)
-other toppings as desired

Method: Thaw frozen bread loaf  by covering with paper towel until pliable or microwave about 20 minutes at power level 1. Preheat oven to 450° F. Grease pizza pan or cookie sheet with shortening. Evenly spread dough on pan. Pour spaghetti sauce over dough. Spread cheese out on top of sauce. Evenly place pepperoni, onion, mushrooms and any other toppings on cheese. Place on center shelf; cook for 12 minutes, or until done around edges. Serve hot.

Yield Servings: Serves 4-6 people.

Grilled Chicken Legs! mmm

Summer time is coming and it’s time to get out your grill! This is a great grilled chicken leg recipe. Add onions and/or bell peppers, whatever kick starts your  taste buds.

*Try this delicious grilled chicken leg recipe by starting with fresh chicken, then marinate and grill. Grilling is the fun part, ’cause you can’t beat that grilled aroma.

Ingredients for new Grilled Chicken recipe:

2 onions, chopped
3 garlic cloves, chopped
12 chicken legs
Salt and pepper to taste
3 Tbsp. cooking oil
1-2 Tbsp. soy sauce
2 tsp. brown sugar
1 tsp. curry powder
1-3/4 c. (14 oz.) chicken broth
2 oz. coconut cream
Parsley for garnish

Method: Peel and chop the onions and garlic. Wash and dry the chicken legs. Add salt and pepper to taste. Brown chicken in hot oil on both sides. Set aside. Sauté briefly the onions and garlic in some oil. Add curry powder, soy sauce and brown sugar; sauté, stirring for 1 minute. Add the broth and chicken legs and cook covered for 20 minutes. Stir in coconut cream. Garnish with parsley. Serves 6.

Crescent Rolls

-2 (8 oz.) pkg. cream cheese, softened (to room temperature)
-2 (8 oz. each) pkg. crescent rolls
-1 egg yolk (save white)
-3/4 c. granulated sugar
-1 tsp. vanilla

Method: Spray 13 x 9-inch pan with vegetable spray. Mix cream cheese, egg yolk, sugar and vanilla together in electric mixer until well blended. Place 1 package crescent rolls on bottom of pan. Spread cream cheese mixture on top. Place the package of crescent rolls on top of cream cheese mixture. Brush top with egg white. Bake in preheated 350° oven for 30 minutes until top is golden brown.

Orange Slush Drink

-9 c. water
-1 1/2 c. sugar
-1 (12 oz.) frozen orange juice concentrate
-1 (12 oz.) frozen lemonade concentrate
-2 c. vodka or gin
*If you don’t drink omit this.

 

 

 

 

Method: Bring water and sugar to boil. Add remaining ingredients to cooled water/sugar mixture. Place in empty Cool Whip or butter containers and freeze overnight.

For serving, fill glass with 3/4 slush mixture, then add 50/50 or Squirt to fill glass.

Thanksgiving Cranberry Relish

1 1/2 c. water
1 (6 oz.) pkg. strawberry gelatin
1 lb. (16 oz.) fresh cranberries
1 medium unpeeled orange, quartered and seeded
1 tart apple
1 c. chopped celery
1 c. chopped pecans
1 c. sugar
1/2 c. ReaLemon

In a medium saucepan, bring 1 cup water to a boil; remove from heat. Add gelatin and sugar; stir until dissolved. Add ReaLemon and remaining water. Chill while preparing remaining ingredients.

In a food processor or by hand, chop cranberries and orange. Place in a large bowl; stir in chopped apple, celery, nuts and gelatin mixture. Chill until set in a 6 cup mold or may be served in orange cups.
